Pitlochry Theatre Herb Society Event


The Heart of Scotland Herb Society’s new season got off to great start, when, in association with Fairtrade and sponsored by the Co-op, it arranged for top chef Mike Cullen to bring his Road Show ‘The Herb Garden – Making a Meal of It’ to The Festival Theatre, Pitlochry.

Mike presented a cookery demonstration using Fair Trade ingredients and herbs that was both inspiring and fun to watch. Here’s one of his recipes.

Pineapple and Mint Cheesecake
Base: 75g Fairtrade milk or dark chocolate
25g butter
50g Fairtade mixed fruit muesli
Topping: 1 x 250g carton Mascarpone or Ricotta Cheese
6 slices of Fairtrade pineapple, chopped
6 sprigs of fresh spearmint, finely chopped
Coulis: 100g carton Thick Greek Yogurt
1 Kiwi Fruit

 

Method: Place the chocolate broken into pieces into a bowl and microwave for 2 mins. Or until melted. Add the butter and mix well, then fold in muesli. Place the mixture into 4 stacker rings or 4 ramekins, buttered and lined with all purpose cling film. Press firmly down.

Put the pineapple and mint into another bowl and microwave 1 min. allow to cool. Put two tablespoons of the pineapple and mint mixture and any juice to one side. Fold the cheese into the remaining pineapple and mint mixture. Fill the rings or ramekins to the top and place in the fridge for 2 hours to chill. Remove the rings or lift the cheesecakes out of the ramekins by the cling film.

Mix the two tablespoons and juice of the pineapple and mint mixture with the yogurt.

To serve: Place the cheesecake on a plate and top with a slice of kiwi fruit. Put a spoonful of the yogurt mixture to one side and sprinkle with grated chocolate.

The Society’s thanks go to the theatre for making it so welcome and comfortable in the River Room, and to the Co-op for generously sponsoring the event.

The next meeting will be the AGM on Wednesday 15 November at 7pm in The Lesser Town Hall, Aberfeldy. There will also have a display of dried and preserved herbs. Please bring along anything suitable to add to the show. Phoenix cards and gift wrap will be for sale. New members very welcome.
