Pitlochry Theatre Herb Society Event
Method: Place the chocolate broken into pieces into a bowl and microwave for 2 mins. Or until melted. Add the butter and mix well, then fold in muesli. Place the mixture into 4 stacker rings or 4 ramekins, buttered and lined with all purpose cling film. Press firmly down. Put the pineapple and mint into another bowl and microwave 1 min. allow to cool. Put two tablespoons of the pineapple and mint mixture and any juice to one side. Fold the cheese into the remaining pineapple and mint mixture. Fill the rings or ramekins to the top and place in the fridge for 2 hours to chill. Remove the rings or lift the cheesecakes out of the ramekins by the cling film. Mix the two tablespoons and juice of the pineapple and mint mixture with the yogurt. To serve: Place the cheesecake on a plate and top with a slice of kiwi fruit. Put a spoonful of the yogurt mixture to one side and sprinkle with grated chocolate.
